LOCAL VARIETIES.-The Gómez Núñez family has managed to safeguard the local pepper varieties of Candeleda (bellotero o vergel, lerén, tres esquinas and agriduz) without the introduction of other varieties, such as la bola, foreign to this area.
MANUAL HARVESTING.-Our peppers are harvested by hand, one by one, process that allows the immature or defective fruits to be discarded.
NO ADDED OILS.-Smoked paprika El Sequero doesn't require added vegetable oils to enhance its colour and procure it consistency.
